Yes, you can! There are many benefits to using stainless steel. It will not corrode, and your worms shouldn't be able to climb up the sides. Plastic tubs often have some 'tooth' that worms can use to gain purchase.
Be sure your tray does not have a coating such as epoxy or plastic, as mealworms will eat it if they can!
The trays will also be a far better thermal conductor than plastic. This can be a drawback if your room temperature isn't controlled adequately during very hot or cold months when you need insulation.
