Though we prefer carrots to potatoes (carrots retain moisture as they degrade rather than it 'weeping), grating them creates more surface area for them to dry out rapidly.
Instead, chop carrots into 1/2" to 1.5" chunks so they have fewer exposed areas and will last you much longer. Even newborn baby worms can eat into the skin of a carrot very easily.
