The Buffalo beetle larvae can be treated just like mealworms - they will use wheat bran as their food and bedding material. They can also use carrots for their water source but also do well on apples cut in half placed cut-side down on the bedding.
Unlike mealworms, they eat any decaying organic material. If the apple weeps water onto the substrate, the Buffalo larvae will enjoy eating it if it grows mold or fungus.
